This recipe is the perfect way to combine chicken with kale, plus a couple of other lovely Red Rooster ingredients.
• 2 carrots
• 3 handfuls kale leaves
• 1 cup flat leaf parsley
• 1 lemon (for juicing)
• 1 teaspoon Honey
• 1 teaspoon Dijon Mustard
• 1/4 cup canola oil
• 1/2 clove minced garlic
• Salt and Pepper
STEP 1 Dice the Roast Chicken, parsley, carrot and pumpkin and place it in a bowl, along with the peas. Chop up the kale and add it to the bowl.
STEP 2 Combine the lemon juice, honey, Dijon mustard, oil and garlic in a bowl. Add in salt and pepper to taste and mix well.
STEP 3 Pour the salad dressing over the salad and toss to combine. Then all that’s left to do is enjoy!
Helpful hint: Save a jam or pasta sauce jar and use it to mix your salad dressings in.
