    SPANISH CHICKEN MIX IN LETTUCE CUPS

    Description

    A great appetiser dish with a hint of Spanish flavours mixed in with Asian style.

    INGREDIENTS

    • 3 Spanish chorizos
    • 2 Red Rooster Corn Cobs
    • 1½  cup of shredded Red Rooster Roast Chicken
    • 2 tomatoes
    • 1 onion
    • 1 stem of coriander
    • 1 tablespoon of crispy noodles
    • 4 lettuce cups
    • Tub of Moroccan Glaze

    METHOD

    STEP 1 Dice up tomatoes and the onions and finely chop the coriander stems and set aside

    STEP 2 Cut the kernels from the corn cob and set aside

    STEP 3 Dice up the Spanish chorizo and place it in a fry pan. You don’t need to add too much oil to it as the fats in the chorizo will be released and the chorizo should cook in its own fats. Fry them for about 8 mins

    STEP 4 Toss all the tomatoes, onions, corn, chorizo, shredded chicken and coriander in a bowl and mix with a spoon.

    STEP 5 Place the lettuce cups on a serving dish and scoop a tablespoon of the mixture onto each lettuce cup. Place spoon of Moroccan Glaze. Sprinkle each with crispy noodles. Ready to serve.
