ROAST CHICKEN PASTA SALAD

Perfect to eat warm in winter or cold in summer. Don’t be afraid to look in the fridge for any left-over veggies that you can add in to mix things up a little bit.
• 1 Red Rooster Chicken, shredded
• 4 Red Rooster Corn Cobs
• 1 large Tabouli
• 400 grams Fusilli Pasta, or your favourite pasta
• 4 tablespoons of mayonnaise
• Juice of 1 lemon
• Salt and pepper
• Fresh parsley to garnish
STEP 1 Cook your pasta, following the instructions on the packet.
STEP 2 Cut the kernels off the corn cob. Mix together the mayonnaise, lemon juice, salt and pepper in a bowl.
STEP 3 Add in the tabouli, chicken and corn. Mix well, and add in the cooled pasta.
STEP 4 Sprinkle with parsley and serve.
