ROAST CHICKEN AND SOBA NOODLE SALAD

Bringing food to life has never been this quick and easy! Spoil your diners with this Asian treat.
• 1 Red Rooster Whole Roast Chicken, shredded
• 1 packet soba noodles
• 2 teaspoon sesame oil
• 1 tablespoon Thai fish sauce
• 1 tablespoon rice wine vinegar
• ½ bunch spring onions
• 2 carrots
• ½ bunch coriander
• 1 teaspoon toasted sesame seeds
STEP 1 Remove the skin from the Roast Chicken and discard. Shred the meat into long, thin pieces.
STEP 2 Fill a medium heavy-based pan with water and bring it to the boil. Add the noodles and cook then for 3-4 minutes, or until they are tender. Drain them and put them in a large mixing bowl.
STEP 3 Add the sesame oil, Thai fish sauce and rice wine vinegar to the noodles and toss them together to combine.
STEP 4 Trim and slice the spring onions and carrots into thin strips and put them in a separate large bowl.
STEP 5 Add chicken and coriander leaves to the other vegetables and toss to combine.
STEP 6 Divide noodles into some serving bowls, top with chicken mixture and sprinkle with toasted sesame seeds to serve.
