    PEA, FETA AND MINT SALAD

    Description

    This lovely light salad is perfect for any summer picnic or dinner party. The combination of these simple ingredients in bound to impress any guest.

    Ingredients

    • 1/2 bunch mint
    •150g feta
    • Juice 1/2 lemon
    • 3 tablespoons extra-virgin oil
    • Salt and Pepper

    Method

    STEP 1 Chop or tear up the mint leaves and place them in a bowl, along with the peas.
    STEP 2 Crumble the feta into the pea and mint mixture.
    STEP 3 Squeeze the lemon juice into the bowl, and add the oil. Add salt and pepper to taste, and them mix it all together.
    *Helpful hint: To turn this simple salad into a light lunch, just add in some left over chicken pieces.
