HOISIN ROAST CHICKEN ROLLS

This delightful recipe combines internationally-inspired ingredients to create a healthy, popular round of snacks for any occasion.
• ½ Red Rooster Roast Chicken, shredded
• 1 small carrot, peeled, cut into batons
• ½ cup hoisin sauce
• Juice of 1 lime
• ½ tsp sesame oil
• 8 mini wheat tortillas
• ½ bunch chives, trimmed
• 1 cucumber, halved lengthways, deseeded, cut into batons
• ¼ cup roasted salted cashews, chopped
STEP 1 Mix together the chicken, carrot, hoisin sauce, lime juice and oil in a bowl until they are well-combined.
STEP 2 Warm the tortillas in the microwave, following the directions on the packet .
STEP 3 Put tortillas on a clean work surface. Spoon on a little chicken mixture along centre of each tortilla. Top the mixture with chives and cucumber.
STEP 4 Scatter cashews over the chicken mixture. Gently fold in the sides of tortillas and roll it up tightly to enclose filling. Cut them in half and secure with a toothpick.
Helpful Hint:Serve the rolls with a little extra hoisin sauce, lime wedges and coriander.
