CHICKEN & CELERY FINGERS SANDWICHES

These simply and elegant finger sandwiches are the delicious addition to every picnic or high tea. The traditional combination of mayonnaise, celery and walnuts pairs perfectly with our Roast Chicken.
• 1/2 Red Rooster Roast Chicken
• Slices of bread
• Cup celery, finely chopped
• Bunch chives, finely chopped
• Toasted walnuts (chopped), optional
• One lemon
• Whole egg mayonnaise
STEP 1: Take the chicken off the bone and dice it up finely.
STEP 2: Add the chopped chicken, walnuts, celery, lemon zest, chives, mayonnaise, salt and pepper to a large bowl and mix it together well.
STEP 3: Spread the chicken mixture on one slice of bread, and place another piece of bread on top. Continue with the other ten pieces of bread.
STEP 4: Chop off the crust and cut the sandwiches in three to create fingers.
*Helpful hint – For extra fresh sandwiches, make the mixture in advance, and put the sandwiches together just before you ready to serve.
