    HEALTHY CHICKEN SOUP

    Description

    This easy to prepare chicken soup recipe will help you give a little TLC to those you love in no time at all.

     Ingredients

    • 1 Whole Roast Chicken, pull apart with your hands into large chunks, then roughly chop.
    • 6 Red Rooster Roast Vegetables, diced roughly into medium to large bits (2 Potatoes, 2 Carrots, 2 Pumpkin)
    • 4 Red Rooster Corn cobs, kernels sliced from the cobs
    • 4 Dinner Rolls
    • 1 medium onion, halved then sliced
    • 1 clove of garlic, finely diced or crushed
    • Chicken Stock Cube, dissolved in 1 litre of boiling Water
    • Dried thyme or mixed herbs
    • Salt & Pepper
    • Olive oil
    • Fresh parsley or sage (optional), finely diced
    • Kale (optional), washed and roughly chopped

    Method

    STEP 1 Turn your oven on to 200C (or 180C fan forced). Pop the dinner rolls in, following the instructions on the packet.
    STEP 2 In a deep saucepan on a medium to high heat, add a good slug of olive oil then the onions and garlic. Season this with a pinch of salt and pepper, and cook for 3 minutes stirring frequently until the onions have softened and started to turn translucent.
    STEP 3 Add the diced roast vegetables and a sprinkle of the dried thyme or mixed herbs. Cook for a further 3 minutes then add the chicken stock, mix well and bring to a simmer.
    STEP 4 Now add the shredded chicken and corn (keep a few chunks of the roast chicken place on top when you to serve the soup), mix gently and simmer for 3 minutes. If you want that extra healthy soup add the kale now.
    STEP 5 Stir the soup, pop the lid on and simmer for a further for 3 minutes. Taste the soup, and add extra salt and pepper as desired.
    STEP 6 Serve in a bowl with the few extra chunks of chicken on top, a sprinkle of parsley and the nice crusty dinner rolls.
     *Helpful hint – Soup is a great dish to add any leftover veggies to, so if you have some carrots or broccoli left over in the fridge, don’t’ be afraid to chop it up and add it in.
