    CHICKEN CASSEROLE PIE

    Cooking Time: 10 - 25 mins | Serves: 4 People


    Description

    This Chicken Casserole Pie is a perfect winter warmer for those chilly evenings or long lunches. Just a few simple steps and a couple of ingredients and you get a pie to fill up hungry tummies.

    Ingredients

    • 1 Red Rooster Slow-Roast Chicken, shredded
    • 6 Roast Vegies, diced in large pieces (2 Potatoes, 2 Carrots, 2 Pumpkin)
    • 1 large Red Rooster Gravy
    • 1 large Red Rooster Mash & Gravy
    • 1 large Red Rooster Peas
    • 1 medium sized onion, halved then sliced
    • 1 clove of garlic, finely diced or crushed
    • Chicken Stock Cube, dissolved into 300ml boiling water
    • 1 sheet of Frozen Puff Pastry – Remove from freezer just before you start to cook
    • Fresh parsley to garnish
    • Salt & Pepper
    • Olive oil

    Equipment

    • 1 Deep Large Sauce pan
    • 1 Large Oven / Pie Dish (approx 2-3 inches deep) or 4 Small single serve oven proof bowls

    Method

    STEP 1  Heat up the oven to 200C (or 180C fan forced).
    STEP 2  Add a good slug of olive oil to a large saucepan and put on the stove on a medium to high heat. Put the onions and garlic in the pan, season with salt and pepper, and cook for 3 minutes, stirring frequently.
    STEP 3  Add in the diced roast vegies, and cook for another three minutes, stirring frequently. Lastly, add in the chicken stock and Red Rooster Gravy, mix well and bring to a simmer.
    STEP 4  Add in the shredded roast chicken, mix and simmer for 2 minutes.
    STEP 5  Pour the delicious mixture into the oven dish, and cover the dish with pastry sheets, making sure all the edges of the dish are covered before you crimp the edges with the end of a fork. Brush the pastry with olive oil, or milk, and sprinkle with a pinch of salt and pepper. If you’re feeling adventurous, you can also sprinkle on a little ground ginger.
    STEP 6  Pop the pie in the oven for 20 minutes, or until the pasty is golden. Serve with love, and a side of Red Rooster large peas and large Mash & Gravy.

     

    *Helpful hint – You can make this as either a whole large pie by using an oven proof pie dish, or alternatively you can use smaller oven proof bowls and make individual pies.
