CHICKEN BLT SANDWICH

A simple sandwich that will fill you right up, this Chicken BLT is a lovely twist on a classic.
STEP 1 Grill the bacon until it’s as crispy as you like it, then transfer to a plate lined with paper towel to drain.
STEP 2 While the bacon is grilling, take the chicken off the bone, roughly shred it and if you need to, warm it up in the microwave.
STEP 3 If you are using the dijon mustard, combine the mayonnaise and mustard in a bowl. Toast the bread and spread with half the mayonnaise mixture.
STEP 4 Divide the lettuce between 4 slices of bread. Add the bacon, tomato, chicken and avocado (if you’re using it) and drizzle on the remaining mayonnaise. Add a sprinkle of salt and a dash of pepper. Top with remaining bread and cut the sandwich in half.
*Helpful hint – line your grilling tray with alfoil to make cleaning up a sinch.
